I love how alive and motivated the sun makes us feel.
This morning I woke up feeling so rested that I just knew it had to be at least 11, if not noon. You can imagine my surprise, when I realized it was only 7:30 a.m. But I LOVE being up early, so I putzed around a few hours before a step aerobics class. I haven't done step in years and had forgotten what a sweaty, sore, wonderful-mess it makes you. Rewind a little...before I got dressed for step, I decided to check my phone and saw that Bridget had texted me earlier.
After the gym, we met up at the new Rusty Pelican Cafe in downtown Edmonds for Grilled chicken salads with apples and apple cider vinaigrette, so good. Harry was there, all cute and boyish, and sleeping like the baby that he is. When I got home Sean confessed that HE was starving so we walked to the Red Twig, and sat in the sun while he had lunch and I had a fourth iced tea with lemon. We visited Dad for a couple hours, totally rearranged our living room, I took both cats for a walk (on their leashes : ) ), and Sean played his guitar and sang for me. The sun was still shining, which had us craving some sort of fresh, south of the border dish. We remembered this meal I make couple times each summer : Chipotle Shrimp Tostadas (look it up on foodandwine.com if you want the recipe-I make mine w/ no sour cream). Homemade tostadas, grilled shrimp seasoned with chipotle chile powder and salt, red cabbage, tomatoes, scallions, avacado, lime, cilantro. Definitely making it again this week. Now Sean is on his way to Scarecrow video to rent us a French thriller (he's going through a French foreign film phase, which I don't mind).
It's 8 o'clock. From my couch, I can hear people still enjoying the streets of downtown Edmonds. It's a good day to be alive.
